Preheat oven to 180 C and prepare a baking tray by dusting with flour.
In a large bowl, add the Cake Flour, Custard Powder and Icing sugar. Whisk these ingredients until combined using the Whisk attachment.
Add the Butter and Vanilla Essence to the bowl and mix into a soft dough, allow the dough to rest for 15 minutes before shaping.
Shape dough into balls of about 1 tablespoon, then press using a floured fork to make the indents.
Bake for 8-10 minutes, then remove from the oven and allow to rest on baking tray for at least 10 minutes until cool as they will continue to cool on the tray.
Melt chocolate by placing in a heatproof bowl and microwaving for 30 seconds at a time. Adjust microwave power to 70% or use a melt chocolate function.
Dip baked cookies into the melted chocolate and decorate as desired.
