Mascarpone & Pistachio Swirl Ice Cream
Ingredients
For the ice cream base:
1 cup milk
1 cup whipping cream
2/3 cups sugar
2 tablespoons condensed milk (optional)
1 teaspoon vanilla
250g (1 tub) mascarpone
Add ins:
30g 70% dark chocolate (you could use milk if you prefer), chopped fine
2 tablespoons sliced pistachios
2 tablespoons pistachio paste
Preparation
Whip all the ingredients for the ice cream base well, making sure the sugar is dissolved and chill the base mixture overnight (make sure to freeze the Cool Scoops ice cream bowl overnight)
When ready to churn, pour the ice cream base into the iced Cool Scoops bowl
Place the mixing attachment in the bowl then cover with the lid
Plug in the machine and switch onChurn the mixture for 20 minutes, add in the chocolate and pistachios after 5 minutes. After 20 minutes you have beautiful soft serveDecant into an ice cream container, swirling the pistachio paste in between.
Freeze for an additional 2 hours minimum so the ice cream can firm up
When ready to serve, scoop into waffle cones or bowls
Drizzle more pistachio paste and enjoy!
