Lentil Arayes
Ingredients
1 cup cooked lentils (well drained)
1 small red onion
Handful of cilantro
1 garlic clove
1 tbsp tomato paste or chutney
1 tbsp soy sauce or tamari
1 tsp smoked paprika or sumac
½ tsp cumin
½ tsp salt
Crunch of black pepper
2 tbsp breadcrumbs or oat flour (to bind)
2 pita breads
1–2 tbsp olive oil for frying
Preparation
Add onion, cilantro to Pixie Chopper and pulse
Add lentils, spices to a bowl and bind together
Mix in the breadcrumbs/oat flour (so it holds together)
Fill the pitas with filling. Cut the pita breads in half and gently open each pocket. Spread the lentil mixture inside each half in a thin layer. Brush the outside lightly with olive oil
Pan fry in a hot pan for 3–4 minutes per side until golden and crispy
To serve cut into triangles and serve warm
