Lemon Poppy Seed Yogurt Loaf
Ingredients
1 cup yogurt
1/2 cup caster sugar
1/2 cup light brown sugar
3 eggs
2 lemon zested,
Juice of one lemon
1/2 cup olive oil
1 1/2 cups flour
2 tsp baking powder
1 tsp salt
3 tbsp poppy seeds
Preparation
Preheat the oven to 175°C
Using the Cuisinart hand mixer, mix together your sugar and olive oil until combined.
Add in the eggs and yogurt then mix again.
Mix in all the remaining ingredients and combine until you have a smooth batter. Pour into a lined loaf tin and bake in the oven for 50-60 minutes until you prick a toothpick into the loaf and it comes out clean.
Serve with some extra yogurt or whipped cream.
