Ingredients

  • 1 cooked chicken breast, cut into quarters
  • 1 tbsp Greek yoghurt
  • 1 tsp mild curry powder
  • 1 tsp mango chutney
  • Juice of ½ lemon
  • 1 tbsp sultanas
  • Salt & pepper to taste

Preparation

  1. Add mayo, yoghurt, curry powder, mango chutney, lemon juice, sultanas, salt, and pepper to the your food processor and chop until smooth.
  2. Toss in the chicken and pulse to chop  until well coated and finely chopped.
  3. Keep in an airtight container in the fridge for up to 3 days, or spoon into a delicious sandwich.
