Chicken Noodle Bites

Crunchy, warm and just too easy!

Ingredients

Sriracha mayo:

125ml good quality mayonnaise

2 Tbsp sriracha, or more to taste 

Chicken nuggets:

4 free-range chicken breasts, cut into chunky bites

2 Tbsp soy sauce

2 Tbsp honey

2 Tbsp sriracha

200g crackles / fried noodles*

75g flour

2 XL free-range eggs, lightly beaten

Pinch of sea salt 


To serve:

1 Tbsp togarashi spice mix (optional)

1 Tbsp chives, finely chopped

Fresh lime wedges


*We have a local favourite crunchy snack made from crispy pea flour, known as crackles. Often seen in a mix with nuts or on their own. They are fried noodles available in a variety of flavours. But any fried noodle will do. 

Preparation

For the sriracha mayo:

Combine the two ingredients and mix well. 

Set aside in the fridge until serving. 


For the chicken:

Place chicken pieces in a large mixing bowl.

Drizzle with soy sauce, honey and sriracha. 

Mix well and cover. 

Place in the fridge to marinate for at least 30 minutes. 

Place crackles / noodles in a Cuisinart Pixie Chopper and pulse until lightly crushed up and the pieces are small enough to stick to the chicken like breading. 

Place flour, eggs and noodles in three separate bowls. 

Season the eggs lightly.

Dip each piece of chicken in the flour, shake off the excess, followed by the egg and then finally cover in the noodles.

Place on a baking tray while you coat all the chicken.


Lightly spray the Cuisinart Compact Max basket with a little olive oil. 

Transfer chicken pieces to the air fryer basket, leaving a little room in between each one. 

Select air fry and set the temperature to 170˚C and the time to 10-12 minutes, depending on the size of your chicken pieces.

Air fry in batches until done. 


Sprinkle them with chives and togarashi. Serve with sriracha mayo, fresh lime wedges and enjoy!
