Apple Pie Walnut Ice Cream

Type: Ice Cream/Gelato/Sorbet

Ingredients

Ice Cream:
1 cup (240 ml) full-fat coconut milk (canned, creamy part)
1/2 cup (120 ml) unsweetened almond milk (or soy for higher protein)
1 scoop (25–30g) vanilla or unflavoured protein powder
1/4 cup caramel pudding powder
1–2 tbsp maple syrup or date syrup (adjust sweetness)
1 tsp vanilla extract
1/2 tsp cinnamon
Pinch nutmeg + pinch salt

Apple pie mix-in:
1 medium apple, finely diced
1 tsp coconut oil
1/2 tsp cinnamon
1 tbsp maple syrup or date syrup

Crunch:
2 tbsp walnuts, chopped

Preparation

Heat coconut oil in a pan, add diced apple + cinnamon + syrup. Cook 5–7 mins until soft, golden, slightly caramelised. Let it cool completely.

Blend Ice Cream Base until smooth, coconut milk, almond/soy milk, protein powder, sweetener, vanilla + spices.

Churn, pour mixture into your Cuisinart FreezeEase ice cream maker, churn for 20-40 minutes until soft-serve consistency

Add Mix-ins, fold in cooled apple mixture + walnuts, churn another 2–3 minutes OR stir manually

⁠Freeze: transfer to a container, freeze 2–3 hours for firmer texture, serve with caramel sauce, and enjoy!
