A Beginner’s Guide to Better Cooking with Stainless Steel

Stainless steel cookware is one of the most versatile and durable choices for everyday cooking, but it does require a slightly different technique from non-stick cookware. The key is simple: preheat the pan, add your oil at the right temperature, avoid excessively high heat and give food time to naturally release before turning it. Once you get the technique right, stainless steel is excellent for searing, sautéing, simmering, making sauces and cooking everything from vegetables to meat.

The Cuisinart Chef’s Classic Stainless Steel 11-Piece Set is designed to make that versatility part of everyday cooking, with an aluminium-encapsulated base for fast, even heating, induction compatibility and a complete selection of saucepans, frying pans, a sauté pan, stockpot and steamer insert.  Plus it comes with a lifetime guarantee.

Why choose stainless steel cookware?

Stainless steel has long been a favourite in professional and home kitchens because it is durable, versatile and doesn't rely on a non-stick coating for its cooking performance.

A quality stainless steel cooking surface also won't discolour or alter the flavour of food, making it particularly useful for cooking ingredients where you want the natural flavour to shine.

Unlike coated cookware, however, stainless steel doesn't automatically release food from its surface. That means temperature control and technique matter.

And once you understand those two things, cooking with stainless steel becomes much easier.

How do you cook with stainless steel cookware?

1. Always preheat your pan

One of the biggest mistakes when cooking with stainless steel is adding food to a cold pan.

Place your pan on the hob over medium heat and allow it to heat for around one to two minutes. You can test the temperature by adding a few drops of water. If the water forms beads that glide across the surface, the pan is ready.

Don't leave an empty pan over very high heat for an extended period, as excessive heat can cause staining or discolouration. Cuisinart specifically recommends avoiding high heat with empty pans.

2. Add oil after the pan is hot

Once your stainless steel pan is properly preheated, add your cooking oil or butter.

Swirl it around the base and give it a moment to heat before adding your ingredients. Ideally, the oil should shimmer but shouldn't be smoking.

This creates a layer between the food and the stainless steel surface and helps reduce sticking.

3. Don't move your food too soon

This is probably the most important trick for cooking with stainless steel.

If you're searing chicken, steak or fish and it seems to be sticking, don't immediately try to force it off the pan.

As food cooks and develops a browned surface, it will often naturally release from the pan. Trying to turn it too early can cause food to tear and leave more residue behind.

Give it time.

Once properly browned, it should become much easier to turn.

4. Use the right heat

Stainless steel conducts heat efficiently, particularly when paired with a well-designed base.

That means you generally don't need to cook everything on maximum heat. Medium or medium-high heat is often enough for sautéing and searing, while lower temperatures are better for simmering sauces and delicate cooking.

The Cuisinart Chef’s Classic Stainless Steel 11-Piece Set uses an aluminium-encapsulated base designed to heat quickly and distribute heat evenly, helping to minimise hot spots.

5. Deglaze the pan for more flavour

One of the advantages of stainless steel is that the browned bits left behind after searing can become the foundation of a great sauce.

Once you've removed your meat or vegetables, add a splash of stock, wine or another suitable cooking liquid to the warm pan. Scrape the browned pieces from the base with a suitable utensil and allow the liquid to reduce.

Those caramelised pieces are packed with flavour, making stainless steel particularly useful for creating pan sauces.

What can you cook in stainless steel cookware?

Almost anything.

Stainless steel is particularly versatile for
- Searing steak, chicken and fish

- Cooking pasta, rice and grains
- Simmering soups and stews

This is where having a complete cookware set can make everyday cooking much easier.

The result is a cookware collection that can take you from a quick weekday dinner to a Sunday roast, batch cooking or entertaining.

How do you stop food sticking to stainless steel?

If food is sticking to your stainless steel pan, check these three things first:

Is the pan hot enough?
Preheat it before adding oil.

Is the oil hot enough?
Add your oil once the pan has heated and wait until it shimmers.

Are you moving the food too soon?
Allow meat, fish or other ingredients to brown before trying to turn them.

Sticking isn't necessarily a sign that your stainless steel cookware is faulty. It is often simply a matter of temperature and timing.

How do you clean stainless steel cookware?

Stainless steel is relatively straightforward to maintain, but a little care will help preserve its finish.

For everyday cleaning, use warm water, mild detergent and a soft sponge or cloth. We recommend the Scrub Daddy range.  The Cuisinart Chef’s Classic set is dishwasher safe, although hand washing is recommended if you want to maintain the mirror finish and extend the life of the cookware.

Avoid steel wool, abrasive pads and harsh cleaners, which can scratch the stainless steel surface.

For stubborn, cooked-on residue, allow the pan to cool slightly before adding warm water. You can also simmer water in the pan to help loosen stuck-on food before cleaning.

And once washed, drying the cookware promptly can help prevent water spots and mineral marks.

Is stainless steel cookware good for everyday cooking?

Yes. Stainless steel is particularly well suited to everyday cooking because it is versatile, durable and suitable for a wide range of cooking techniques.

The important thing is learning how stainless steel behaves differently from non-stick cookware.

Instead of relying on a coating for easy food release, stainless steel rewards good cooking technique: preheat, add oil, control the temperature and let food brown before moving it.

That's what makes stainless steel more than just a cookware material. It gives you greater control over the cooking process.
